I replaced the galvanized chain with stainless and maybe it is just slightly different enough in the chain spacing to cause a jam on "up" just about 5feet from the anchor. Or perhaps it needs more drag on the chain to keep it from bunching? Maybe put my foot (in shoe of course) lightly on it at that point? Thirty pound anchor.

Chain needs to match the gypsy if I remember correctly my lewmar takes 1/4"G-3 :thup
 
If your windless is a 700 chain must be 1/4" G4 or 1/4" BBB, if however it's a 1000 than 5/16" G4 or BBB.
Any other type of chain will cause you problems.
If line is pilling up in the anchor locker the chain may be bunching up under the windless, had this happen a couple of times.
Your gypsy could also be damaged or worn.
30 pound anchor is a behemoth for a 25.
I've had both the profish 700 and 1000, also upgraded a 700 to a profish so quite familiar with these beasts. If you don't have the exact line or chain recommended they can cause severe mental or physical pain. :x
 
The wrong chain will jam-- I use only G4 /14" (Although the 503 Gypsy will take 7mm DIN 766, G4 1/4' or BBB 1/4". There are also 3 other gypsies for the Pro Fish series: (502) for 6mmDIN 766, (516) 5/16 ISO G40 with 9/16" to 5/8" line and 8mm DIN 766, 8mm ISO 4565, ,(504) 5/16" BBB, with 9/16" or 5/8" line.

The cheapest thing is going to get the correct size chain. G4 1/4". is 1/4" OD of the chain wire. The chain will have "G4" stamped on it. The BBB is shorter and the coil proof longer links.
