Our 2000 C-Dory does not have tie down/towing eyes at the stern. I don’t like the idea of using the cleats on the gunwale. I’m considering adding U-bolts to the stern panels for tie downs and possibly towing an inflatable dinghy. Please see the attached photo. Any thoughts?IMG_2599.jpeg

That’s what I did on my previous C-Dory, I used a piece of Starboard as a backing plate for the U bolts.

Yes, by all means. Our C25 had them installed I think from the factory. It seems to me that every boat I've ever owned had them. I use them to attach my rear tiedown stramps to the trailer for towing. I have also put a towing bridal on for towing the dingy although I found it easier to just use one of the rear cleats for that. They give you a backing plate with the U-bolt but I do like the idea of also using the Starboard as Standas mentions.

My boat came with tie down rings on the stern. (Ignore the circle.)

On my 2006 22 cruiser, the core in the transom did not go all the way to the corner creating a substantial difference in thickness, I’m assuming it’s pretty standard across the years. A couple inches on either side will make it easier to install backer plate.
You most likely noticed this but figured I’ll mention it anyway.
