Boris, Joel, I have a bit more info on the rotors now.
I called it a plating, simply because it is such a smooth (and hard) surface for the disc pads to press against, but are probably just lathe turned surfaces. They are cadmium plated, I believe the whole rotor is. Here is a picture I took just now to illustrate what looks like a surface plating breaking off the base metal, just looks that way. These are 7 yrs old and I've always rinsed them with fresh water after every trip.
I also called Pacific Trailer today, asked if they sell SS rotors yet? They said absolutely not, they still don't work, warp like crazy. Said they get cherry red (or very hot) while driving then they are suddenly dipped into cold water when launching. Well if that's the problem, not only do I have about a 10 minute setup time before launching, I could make a water spritzer from an old Windex bottle and do a few spray shots to cool them down before launching.
I don't buy it that all SS rotors are bad. Tie Down Engrg has sold them for many, many years, do they all fail? Pacific said Tie Down's are cr@p. Pacific only sells Cad plated rotors, they are only good for 2-3 yrs in the salt environment. I'd rather try the SS rotors anyway, at least try something different. I'll do some price comparisons and compatibility with ceramic pads which are considerably harder than the SS rotors.
And yes Joel, disc brakes even with iron rotors, are far superior to drum brakes, they work very well, have never locked up like drums sometimes do and begin to work very shortly after retrieving from the water unlike drums.
