I'm looking to do this on my boat. Plenty of examples and descriptions if you look at van conversion sites and Youtube videos.
One conversion I did, left the foot pump in place for most uses, but a small flow thru pump from Jabsco is turned on with a momentary switch. (I put the switch on the front of the galley cabinet. I would use the switch for filling up large containers such as the Breta filter. Adding a pressure electric pump will tend to waste water if one is not careful.
The small electric pump is not pressure activated--and is placed before the foot pump.
If you want to take showers or freshwater wash down--then this type of installation is not for you. For most others it is a good way to go.

The pump I referred to is Jabsco part number: 42510-0000 pump only. Unfortunately these are discontinued. There is an alternate, most likely made In China:

For $32 I probably would take a chance. All of these are 3/8" tubing, so I used a reducer to the 3/8 and then back up to 1/2" for the tube to the foot pump and or
These pumps are not self priming, so they have to be below the top of the water column. This is another reason to leave the foot pump in series with this pump, so it will prime it. The other way would be to put the pump near the output of the freshwater tank, if yours drains from the bottom.
Occasionally I see these pumps in consignment shop.

I prefer the self priming diaphragm pumps with a pressure switch myself. Not that the centrifugal pumps mentioned don't work, because they do.
Highly recommend. Mine's got an electric pump--self-priming in theory though it usually needs help at the beginning of the season--and I use it for the sink and for a freshwater washdown/coldwater shower at the transom. Like the others, I have an on/off pull switch on the captain's seat side of the galley cabinet to power it on before I use the faucet.
