This is my second year canning salmon. Never before canned anything before last year. I'm using 1/2 pint wide mouth jars, 1/2 teaspoon salt, 1 teaspoon oil, and about 1/8th teaspoon of powdered real smoke. It's delicious!

Awesome. I haven't caught enough Coho to think of canning this year. The run in area 13 has been slow.
I've been canning Albacore the last few years. It's well worth the effort.
 
I agree. Canned albacore is amazing. Not sure how the big companies can ruin such a great tasting fish in those cans at the store. My crew caught just under 100 albacore this year. I'll start canning those soon!

I canned up a bunch of pink salmon that I got up in the San Juan’s this summer, sounds like we use the same recipe except I don’t use any oil. I do put some chunks of different peppers in the jar along with a pinch of garlic powder. I did smoke some and can some too.
