I struggle to filet a salmon in under 15 minutes and if I take my time it doesn't look to jagged and I get most of the bones out, but maybe I should take lessons from this guy.

Guy's knife is probably so sharp it'll take your whole hand off before you'd notice if you're not careful.

Yeah that is impressive. It takes me about 2 hours to do the 55 reds I am allowed to keep each year. I thought I was pretty fast with it - guess not!
