Corn Crab Chowder

We eat a lot of blue crab around my house because they are so plentiful and I just plain love them. I'm constantly trying new receipts and the following one I got off the net somewhere but It's really delicous and I just had to share it.

Crab Corn Chowder (very popular around Beaufort and Morehead City NC)

1 lb fresh cooked crabmeat (I use the white meat and add cracked claws)
4 slices of bacon diced (I put the bacon in the freezer for about 1/2 bour before dicing with kitchen shears makes it easier)
3/4 cup chopped onion (I like White Onion down here it's Vidalia PNW would be Walla Walla)
2 medium potatoes ( I use red potatoes)
1 1/2 cup water
1 1/2 tsp salt
1/4 tsp pepper
1/4 tsp dill weed
1 can whole kernal corn (fresh or frozen)
1 1/2 tbsp flour
1 cup half and half
1 tbsp fresh parsley
1 1/2 tbsp butter

Saute onions and bacon in butter. Add potatoes, water and seasonings. Cook until potaotes are soft. Add corn and half and half and heat. Thicken with flour and more butter. Add crabmeat. Heat through and Garnish with parsley. I also add cracked blue crab and stone crab claws. We catch our own but if you have to buy the meat look for back fin meat. This will feed 4 to 6 normal eaters.
 
Sounds a lot like one we do here with Dungeness crab. It is really nice if you blacken the corn and while doing so blacken a few jalapenos and add them chopped up for a little zip. Yummy, may have to do that tonight.

Yeah I crack the claws and peel away some of the shell so you sort of pick them up by the pincher and suck the meat out. This is in addition to a pound of cooked picked crabmeat.
 
Off to the store for Crab :lol:
I love the fall when Chile, lasagna, beans and cornbread, these types of dishes and soup return. Fun to eat on a cold day in a warm boat !

Hummm... In Stanwood WA now on SENSEI's farm. Think I have an idea now for a great meal...especially with the sweet corn just now being picked.
