This is a $45 induction cooker connected to a 1000W pure sine wave inverter. The lowest setting is a nice simmer and the highest setting could fry (which I never do). It doesn't trip the inverter. It seems to be about a quick as a microwave and no open flame.

I even tried baking a potato. Worked great and the outside was brown in some areas. It took almost an hour with the heat setting at 2 (about 200W) and it didn't even draw the house battery down enough to register on my meter. The sun was still up, so my solar panel was producing 50W.

I found a tiny Dutch oven at a thrift store. Here I have filled it with cornbread batter and it's ready to bake. The induction burner heats up the cast iron Dutch oven just like it was inside a regular oven.

The lid doesn't get hot enough to get the top brown and crispy. For that, I cook it for 25 minutes (so that the batter has set) and then turn it upside down for 10 minutes. It will stay plenty hot while I cook the main course.
