I cannot figure out how to do it. Does anyone have instructions?

The table has to want to convert.
Humor aside, you need to slide the front seat forward. Probably a latch or two somewhere that need to be released. Secure the latches so the seat can’t move.
Next, unfold and secure the table top.
Followed by releasing what ever supports it in the raised position. IIRC, My 2005 had a fixed pipe support.
Lower the table to the cleats on the seats. Secure as necessary.

Does it require a screwdriver to remove the table post? What goes in it's place to hold the table lower? Does it just rest on the ledges?
I'll look for said latch. That's probably what's holding me back if I can find it.
Surprisingly, none of this is in the owners manual. |

Should be a threaded knob.
Post is friction fit (at least mine is). There should be a short post for use when the table is at the berth level. |

I got it done.
Sure was more hassle than I expected to deal with for changing it twice a day but it works.
I had to bang pretty hard to get the pins in the holes. Even then they aren't lined up perfect for full insertion but are holding. |

Yes, we did the dinette/bed thing once then never again in my boat. |
