They were a gorgeous pair of fish and they'll look even better battered and fried!

Any good recipes to share. We have a deep fryer, but since it takes too much oil to fill the drum, we are looking for stove top options.

Look for the Cuisinart Mini Deep Fryer. Only takes a quart of oil and is perfect for small meals. That is what we use. Be sure to use an oil with a high smoke point like refined peanut. For pan "deep" frying, I use Crisco which has a decent smoke point and is cheap.

Always remember to completely dry the fillets and cover in flour before going into the batter. This will keep the batter from coming off.

Sometimes will buy a "fish fry batter" mix or make our own. Sometimes we'll do a dry-wet-dry routine. Roll the dry fillet in flour mixed with seasonings (salt, pepper, Old Bay) then into beat egg (thinned with a bit of water), then rolled in something delish like panko, crushed Ritz crackers, bread crumbs, or crushed Lay's potato chips. Sometimes we'll add some kick to the eggs and whip it in.

Blackened is also good!

Also very good in butter and garlic. In a pan on med heat. Season with what ever you like.

Here's a great homemade fish and chips recipe. Absolutely delicious.

For some other lingcod recipes, go here. This guy has some great NW seafood recipes. I read one of his blogs about reducing apple cider to a syrup and brushing on grilled salmon...wow, it was amazingly good!

At my house you have to toss those back because they are too small.......35" min....seriously.....However, those are fine ones in your area. No matter the size, they are one of my favorites to eat!

went with this tonight and were they tasty! don't forget the cheeks either. not the biggest on these guys but well worth the effort to cut them out!

our slot is 26"-36" for a keeper so much bigger and they live to fight another day. bigger have been released but they are rare. nothing like AK though. last i was up in Sitka, the average on the boat was 45"+ and man do you get spoiled fishing up there!
