If our Bimini frame and top were horizontally in line with and behind the radar dome would it interfere with the radar signal to the rear?

No. Even sail boat masts don't normally interfere. The reason is that the magnetron (or transistorized transmitter) is on a rotating bar. The rays are parallel and the bar is over 18" wide-some on up to 12 feet, about the maximal scanner on "smaller" private boats. Inside the "dome" there is a scanner rotating.
