Some guy crossed the Atlantic in a 5'4" sailing tub...
There are lots of very nice open boats which will sail better than the one in the video. If you want a sailboat--get one which you will be comfortable in, and would not be a risk to you. This looks "tippy" as they say...

If you want a small sail boat there are a number of "project" boats which are free or almost free...but the rub is restoring them. One guy I followed got a 26 foot boat for about $500, put a few thousand more and sailed it to Tahiti...but that same year several people were lost in much larger and far better boats...so it is always a roll of the dice, if you are not fully prepared and skilled.

Bob,

I have no aspirations of sailing! I get my exercise via the gym and yoga! My boating consists of turning the key and motoring away. Just thought it was an interesting rig and probably at a "cheap" purchase point.

You could just have a foil under the front and keep the stern in the normal position. Not a good as a fully foiled boat but they still get around. Sort of like this:
