Went out this morning and got a limit of quail.
This is some good stuff-

12-18 breasts
1 diced medium onion
1 can cream of mushroom soup
1/4 to 1/2 cup sherry (optional) [I used a Riesling]
Pinch of oregano
Pinch of crushed rosemary
Salt and pepper to taste
1/2 pint sour cream
Place breasts meaty side down in 15X12 inch baking dish. Do not over-crowd. Saute onions in small amount of fat in skillet. Mix soup, onion, sherry, herbs, salt, and pepper. Pour over bird breasts. Cover baking dish lightly with foil. Bake in 325 degree F. oven for 1 hour, turning occasionally. Add sour cream. Stir, bake about 20 minutes longer.
Served with rice

Roger,

That sounds good. I assume they were valley quail. The salty dog and I were over in SE Oregon, but didn't get much hunting in. Mostly discovering the territory where the birds hang.

Steve- yes, valley quail.

I also added garlic when I fixed that up--- I forgot to list it in the recipe (I don't always follow recipes Rolling Eyes )
I tend to add or subtract something when I cook.

It had been over 30 years since I had last hunted birds- I could use several hours of shooting clays! Embarassed I went through almost two boxes of shells.

A shotgun? Smile You use a shotgun Sad When I was a kid we used a .22 on everything...We couldn't afford shotgun shells, well maybe a couple of boxes of .410 a year. Wink Most of the time though, it was a Red Ryder B.B. gun...Course you had to be within 20 ft. or so for that. Wink Sure miss that "Warm Country" hunting. CoolSmile Jack

That brings back memories. Laughing
I took the 22 out one day to get a chicken for dinner. There was one roosting on the fence, so I steadied myself against the corner of the shed and took a shot--- darn chicken didn't move- dang it - I missed! Shocked As I took aim for another shot, I noticed a trickle of blood from the eye--- shot it right through the eyes and since it was on roost, the feet was locked on the fence dead. Very Happy

I know what you're talking about there.. Sad I wasn't supposed to be shooting Woodpeckers with my new pellet rifle Smile But who could resist an easy shot right in front of the house. Teeth When my Uncle came home there was a dead Woodpecker hanging there 30 ft. in the air like a flag. Embarrased Lost my gun for a month Cry

i agree with jeff. if you're going to tell us about the great meal you're preparing, the least you could do is invite us over to share it.
by the way, you didn't mention which kind of wine you'd be serving with that , meal.
