I have enjoyed way too much maintenance of brakes and wheel bearings on my truck and trailers. The boat trailer especially (3 axles, ~12,000 lb loaded, travels thousands of sometimes bumpy miles yearly), can be a lot of work.
If you can find them, a soft iron bar maybe 3/4' in diameter and a foot or more long is a helpful tool for removing and re-installing bearing races. It's soft enough that its end gets beat out of shape in doing 2-3 wheels, and has to be filed back into a more usable shape every so often. I beat on it with a 3 lb hammer.
If you have bearing buddies, a heavy brass hammer or just a large chunk of brass (mine's about 3lb) is a good (softer) tool for knocking them out and back into position in the hubs. Tap around the side of the BB in various locations as you rotate the wheel, and it will work its way out.
I inherited these tools from Cindy's grandfather, who was a big rig truck mechanic, and worked on countless heavy-duty wheels.
I use a round piece of starboard to push the new grease seal into the hub, encouraged by the 3lb hammer.
I use the highest quality waterproof extreme pressure wheel bearing grease I can find - much better than general purpose marine grease.
I get much of the dirty grease off the bearings and other parts with mineral spirits, such that I can see if they're worth re-using. If they look OK, they get cleaned further with a more powerful solvent. Brakleen is the most powerful I've found.

Pat,
That looks like a great guide. The only thing different that I do as you may remember, is that when I put the castle nut on I spin the hub as I tighten the nut until the hub drags, then back off it only till it doesn't drag, then lock it there.
