This is where I removed the v-berth bunk and will have to replace it someday. Do I grind everything back at a 12:1 ratio to prepare for that?

No you don't need to but grind the surface where the epoxy and tabbing material are to be laid on the side of the hull. About 3" is fine. Use two tabs, one 6" wide and one 3" wide should do the job.
